This turned out very well. I carried one of the mini cheesecakes to my Mother
and Dad to try and was given raves. You might think, *well, it's her folks*.
Believe me, if they didn't love it they would most definitely tell me!
This is my first attempt. I am going to try making a chocolate version and
a more limey one and also making a lower calorie/fat crust using Smart Beat.
For this I bought the pre-made mini 6 to a package graham cracker crusts.
Filing:
8 oz fat-free cream cheese
2/3 cups egg beaters
1 cup Splenda for baking
1 T lime juice
pinch salt
Place all in food processor and process until smooth. Pour equally into between
6 crusts. Bake at 350 degrees for about 25 minutes (firm-not hard-just not
jiggly). Once cool refrigerate under cold to serve.
WW-About 4 points-2 of which were the crust. It was actually good enough to
cook crustless.
